Our Family
Paddock To Table began with family, hard work, and a shared belief of, do it properly or don’t do it at all.
Back in 2014, Frank and his son Daniel opened the doors with a clear vision: bring high-quality, locally sourced meat to the community, and do it the right way. That meant whole carcass butchery, honest sourcing, and building strong relationships with the people behind the product.
In the early days, it was just the two of them. Cutting, serving, and laying the foundations for what the business would become. Long hours, hands-on work, and a commitment to doing things properly from day one.
In 2019, Marcus joined the business, bringing fresh energy, intense attention to detail, and a shared passion for locally sourced produce, strengthening what was already there, while helping push the business forward.
Today, the team has grown, but the core remains the same. You’ll still find Frank behind the counter, with Daniel and Marcus not far away - working side by side, just as it started.
Our History
Paddock To Table began with a simple idea, do things properly, from the ground up.
What started as a small store in Laverton, with little more than a meat cabinet, a freezer, and a big vision, quickly became something more. Built through years of hard work, it laid the foundation for the next step. Taking control of where our food comes from.
That led to the purchase of our first farm in Gordon, just outside Ballarat. The goal was clear: finish our own cattle, on our own terms. Frank spent months preparing the land, allowing pastures to rest and regenerate before introducing the first herd, ensuring they were grazing on nutrient-rich grass from day one.
Around this time, Marcus joined the business, bringing a new level of energy and a shared focus on growing the brand while staying true to what it stood for.
As demand grew, so did the need for a larger and more equipped space. The business moved to a purpose-built store nearby, made to handle the volume while improving the experience for every customer walking through the door.
With continued growth came further investment in the future. Expanding to a significantly larger farm in Bylands, just outside Wallan, offering a higher grazing capacity.
Today, that same mindset remains. Take the time. Do it properly. Build something that lasts.
