Dry-aging is a craft we are super passionate about and producing exceptional grass fed beef steaks with a rich, unique flavour is what we do! During dry aging, natural enzymes break down tough fibres while moisture evaporates, intensifying the beef’s taste and tenderness.
Our purpose built Dry age room is the centrepiece of our amazing retail store and our beef can be aged from 2-6 weeks depending on size, fat cover and marbling. Cut daily by our expert team of butchers, we are proud to offer you a selection of Victoria's finest beef!
